Green Power! Spinach Smoothie

I picked up Real Simple’s February 2013 issue back in January, but really never had a chance to look through it completely. I’ve only been able to look at a page or two before Amina starts crying or wanting my attention. This past weekend I found myself reading about green smoothies in the magazine and decided to try out one of the recipes.

So after our Mommy and Me play group, Amina and I stopped off at Ralph’s (our local grocery store here in LA) and picked up some apples, fresh spinach and avocados. And in between Amina’s feeding, playing and naps, I was able to blend up a really yummy smoothie! There are two other smoothie recipes in the magazine that I hope to try and share with you in the near future.

Spinach Smoothie with Avocado and Apple



1 1/2 cups apple juice

2 cups fresh baby spinach, washed

1 apple, peeled and chopped into small pieces

1/2 avocado, diced

water, optional- used to reach desired consistency

Combine apple juice, spinach, apple, and avocado in blender and puree until smooth. Add water to lighten consistency.

Refrigerate prior to drinking. Serves 2.



Teach Mentor Texts Book and Bookmark swap

Teach Mentor Texts is a website that I started following a while back. It’s a website designed by teachers for teachers. It evaluates children and YA books that teachers can use in the classroom. In my opinion it is an invaluable resource to have in my box of “go-to” teacher resources.

TMT is hosting a book and bookmark swap this year and I’ve signed up. The theme for the first swap is your favourite literature in the children to young adult catagory. I’m not going to reveal the book and bookmark that I plan on swapping just yet….maybe after I’ve mailed them off to some lucky person.  I’ll give you one hint- the book was originally written in another language and translated into English.

Update: Now that the swap has occurred, I’ll reveal the book I sent out to my partner: The Little Prince.  I was introduced to the book in my OAC (grade 13) French class. Don’t worry, I mailed out the English version!
